~ Vixo's recipe for Pavlova ~

Igrediets

For the merigue

1 1/2 teaspoos pure vailla extract

2 teaspoos white viegar

1 1/2 cups graulated sugar

1 1/2 tablespoos corstarch

3/4 cup - 6 large egg whites, preferably room temperature

Pich salt

For the toppig

2 pits fresh or froze berries

1/4 cup sugar

Whipped cream for toppig

Istructios

Pour the vailla extract ad viegar ito a small cup.

I a large bowl whip the egg whites ad salt, util soft peaks/trails start to become visible ad the egg white bubbles are very small ad uiform, approximately 2 to 3 miutes. Stir the corstarch ito the sugar i a small bowl the slowly ad gradually spriklig i the sugar-corstarch mixture ito egg whites.

Slowly pour i the vailla/viegar.

Whip util merigue is glossy ad stiff peaks form whe the whisk is lifted, 4 to 5 miutes.

O a bakig sheet lied with parchmet paper or a silicoe lier, pipe or spoo the merigue ito 8 to 10 large roud mouds that are 3 iches wide. With the back of a spoo, create a idetatio i the middle of the moud for holdig the fillig oce merigue is baked.

Place bakig sheet i the 275°F ove. Reduce ove temperature to 250°F. Bake for 50 to 60 miutes, or util the merigues are crisp, dry to the touch o the outside, ad white (ot ta-colored or cracked). The iteriors should have a marshmallow-like cosistecy.

Check o merigues at least oce durig the bakig time. If they appear to be takig o color or crackig, reduce temperature 25 degrees ad tur pa aroud.

Getly lift from the bakig sheet ad cool o a wire rack. The merigues will keep i a tightly sealed cotaier or idividually wrapped at room temperature for up to a week if your house is ot humid.

If you wat to make a berry sauce, heat the berries over medium heat i a medium saucepa with the sugar. Cook, stirrig oce or twice, for about 5 to 10 miutes, util the berries are jammy.

Remove from heat ad let cool completely. If you make the sauce ahead of time, store it i the fridge.

Top with your favorite fillig (lemo curd, raspberry or blueberry sauce, ad/or freshly whipped cream) ad serve.
